WOW!!! MUITO MUITO BOOOOOOMBASTIC!!...Dear Toscani,<br /><br />WOW!!! MUITO MUITO BOOOOOOMBASTIC!!!<br /><br />What a wonderful text and what a beautiful memory of one of my last night in São Paulo! I can only feel honest and true love for you, Lucia, Alice and Baba. After being at your place almost every day a week, being fed, exposed and taught about Brazilian food and culture - serving Swedish meatballs was the least I could do. I am very happy that I am wearing the actual shirt of São Paulo while cooking, paying tribute to the town that "Non ducor, duo" (and, as we both now, my sidekick Moika wears the town symbol on his upper left arm). <br /><br />I love that we are just sitting and chatting as usual, almost forgetting that the camera is on. So bad that I forgot the cucumbers in vinegar in the fridge. But Swedish meatballs comes with so many accessories that it's very easy to forget one. <br /><br />It was an honor and a pleasure.<br />Beijos and PEAS ON EARTH!<br />Hel<br /><br /><br />☃SWEDISH MEATBALLS w MASHED POTATOES ☮<br />served with Lingonberry jam, Sliced cucumber in vinegar and Brown sauce.<br /><br />***<br /><br />MEATBALLS:<br />• 500 g minced meat (carne mohida) - From cow or pig. Or both!<br />• 3 stems of selleri (aipo) - Chop 'em in small pieces!<br />• 0,5 dl breadcrumbs (faringa de rosca) - Let 'em soak in lukewarm water (2 dl)<br />• 1 egg<br />• salt & black pepper<br />• butter - to fry in<br /><br />Put the breadcrumbs in lukewarm water (2dl), let them soak. <br />Chop the selleri in small pieces. Fry and let them cool down.<br />Remove the water from the breadcrumbs if it's too much left.<br />Mix minced meat, egg, breadcrumbs, egg, salt & pepper. (My 100 years old Grandmother always tastes the meatdough. You can do it as well.)<br />Make small/medium sized round meatballs with your hands. Could water on the hands makes it easier.<br />Fry in butter on medium heat. Keep 'em rolling, they very easily get stuck in the pan. (BTW, I really think you should get a proper frying pan, Tosca!) Gentle hands, a beer while fryin' - helps.<br /><br />***<br /><br />MASHED POTATOES:<br />• potatoes - Lots!<br />• butter <br />• milk<br />• salt & white pepper<br /><br />Get to know a tall, strong, tattooed Brazilian rocker.<br />Let him help you peel the potatoes.<br />When they're boiled, mash 'em with a fork or a special tool made for this activity.<br />When the potatoes are semi-mashed add the butter.<br />Then add milk, salt and white pepper.<br />The mashed potatoes should be fluffy as a cloud!<br />(Put on the lid so you don't loose the heat before serving)<br /><br />***<br /><br />SLICED CUCUMBER in VINEGAR:<br />• 1 cucumber<br />• parsley, 2 tablespoons<br />• sugar, 4 tablespoons<br />• white vinegar, 2 tablespoons<br />• salt, 3 pinches<br />• water, 1 dl<br /><br />Slice the cucumber in very thin slices.<br />Put it in a bowl, add salt, stir.<br />To remove the water, put something heavy on a plate and place it over the cucumbers for 30 mins, then remove the water.<br />Mix vinegar, water, sugar, pepper and parsley.<br />Stir until the sugar is dissolved.<br />Pour over the cucumbers.<br /><br />***<br /><br />BROWN SAUCE:<br />• milk, 4 dl<br />• flour, 2 table spoons<br />• broth, half a cube<br />• soy sauce, until it's light brown<br />• cream, 1 dl - floating<br />• lingonberry jam, 1 tablespoon<br /><br />Mix milk and flour. Heat and stir. Add broth. Stir. Add soy and cream. Taste. Add lingonberry jam. Taste.
